1. Beat eggs with salt and pepper in a bowl
2. Heat butter in a non-stick pan over medium heat
3. Pour in eggs and let cook undisturbed for 1-2 minutes
4. As eggs set, gently push edges toward center
5. When mostly set but still slightly runny on top, add cheese
6. Fold omelette in half and cook 1 more minute
7. Slide onto plate and serve immediately
