Instructions

1. Dice tomatoes and set aside 2. Beat eggs with salt and pepper 3. Heat olive oil in a non-stick pan 4. Pour in eggs and let cook for 1-2 minutes 5. Add diced tomatoes to one half of the omelette 6. When eggs are mostly set, fold omelette in half 7. Cook for another minute 8. Slide onto plate and serve hot
